GRILLED FISH TACOS WITH CILANTRO SLAW
- 1 3/4 pounds fish, (sea bass, swordfish or any other firm fleshed fish)
- non-fat sour cream
- salsa
- 1/3 cup lime juice
- 3 tablespoons tequila
- corn tortilla
Cilantro Slaw
- 3 cups red cabbage, shredded
- 1 cup cilantro leaves, (firmly packed and minced)
- 3 cups green cabbage, shredded
- 1 teaspoon sugar
- 1 tablespoon oil, (preferably canola)
- 1/2 cup lime juice
- 1/2 teaspoon cumin seeds
- salt and pepper to taste
Rinse fish, pat dry and place in a zip lock baggie with lime juice and tequila. Turn to coat. Refrigerate for 15 minutes or up to 4 hours, turning occasionally.Prepare Cilantro Slaw by combining all ingredients in a medium bowl. Refrigerate for up to 4 hours.Remove fish from marinade and spray lightly with cooking spray. Grill over medium-hot coals turning once until lightly browned and just opaque on inside (about 10 minutes). Cut fish into bite size pieces. Heat corn tortillas until soft. Place fish in tortillas and add cilantro slaw, salsa and sour cream to taste.

ITALIAN FISH STEW
- 800 g tinned tomatoes
- 1 kg mixed fish
- 1 onion
- 6 cloves garlic
- 1 red pepper
- 300 ml white wine
- 300 ml stock
- 1 bay leaf
- pinch of saffron
- 150 g mussels
- 1 tbsp. tomato puree
- 1 tsp. chili powder; seasoning
- 2 tsp. basil;
Soak the saffron in a little warm water. Skin the fish and cut into bite sized pieces. Chop and cook the onion, garlic and pepper in some of the stock for 5 minutes. Add the drained, chopped tomatoes, wine and the rest of the stock, tomato puree, bay leaf and basil. Bring to the boil, cover and simmer for 10 minutes. Add the fish and the saffron water, chili powder and seasoning. Simmer for 25 minutes. Add the mussels and cook for another 5 minutes. Discard the bay leaf and any unopened mussels. Add the prawns and serve immediately.

TUNA FOR 1
- 1 can tuna (without oil)
- 1 Small Onion
- 1/2 Bell Pepper
- A squeeze of lemon
Chop onion and bell pepper small. Add to tuna and squeeze some lemon to taste. Enjoy

BASIL PARMESAN CATFISH
- 4 Fillets Catfish (or similar white fish)
- 1 Tbsp. olive oil
- 2 Shallots, slices into rings
- 4 Tbsp. white wine
- 1 Lime
- 4 freash basil leaves, sliced thinly
- 4 Tbsp. shreadded parmesan cheese
- Salt and Pepper
Heat olive oil in non-stick skillet over medium high heat. Add shallots and saute until tender. Salt and pepper fillets and add to skillet, cooking for 3 - 4 minutes until fish begins to turn light golden brown. Flip fillet, add white wine and cover. Cook an additional 3 - 4 minutes or until fish is opaque and flaky. Sqeeze lime juice over fish, top with sliced basil leaves and parmesan cheese. Cover until cheese is melted. Serve with leftover sauce in pan. Serves: 4
